Caramelized Almonds with Lavender
 
These sweet and savory almonds are great served alone or on a cheese plate. Add to your favorite salad, or package for a “hostess/host” gift to give during the holiday season.

  • 3 Tbl. Sugar
  • 2 teas. Fennel seed
  • 1 teas. Lavender buds
  • 1 teas. salt
  • ½t to 1 t crushed red pepper
  • 1 Tbl. water
  • 1 Cup of raw almonds
  • Variation - add ½ teas. of orange flavoring
Directions
  1. Preheat oven to 325. Mix the first five ingredients, then add the water and mix to a slurry. Add the almonds, mix to coat. Put the almonds on parchment paper on a rimmed baking sheet and bake for 14-16 minutes. Stir at 6 min, 10 min, and 12 min intervals, using a spatula wrapped in parchment paper, as the caramel mixture gets really sticky the longer it cooks. You want the almonds golden, but not brown. Once they’re done, remove them quickly onto a new sheet of parchment paper on the counter and separate as much as possible before they cool.
