Salsa Cruda

  • 1½ lb. diced heirloom tomatoes or mixed cherry tomatoes sliced in half(if larger quartered)
  • 1 tsp. sea salt
  • ¼ c. chopped onion
  • 4 garlic cloves
  • 3 Tbs. olive oil
  • ¼ c. black olives sliced
  • ¼ c. coarsely chopped parsley
  • 2 Tbs. chopped fresh basil
  • ¾ lb pasta
  1. Combine tomatoes, sea salt, chopped onion, garlic, olives and olive oil. Set aside. Meanwhile cook ¾ lb pasta. Add the tomato mixture to parsley and basil and serve over the warm pasta.
